Quick, easy, and pretty low in points, what more could a girl ask for?
Well, in this case, I could ask for a recipe that uses more beef. I tried out this Weight Watchers recipe after making the almond butter last night.
While this was pretty tasty, it only called for 1/3lb of ground beef. What am I suppose to do with the other 2/3rds? I was a rebel and threw in 1/2lb. I also used Italian seasoning vs. the seasonings called for and tossed in a jar of mushrooms.
The dish turned out a little dry. I think next time I’d add in some marinara, but those Muir Glen crushed tomatoes will still make it in the dish.
Overall, I’d suggest giving this recipe a shot for a quick weeknight meal.
PS. The almond butter was a hit! It starred at breakfast today with a french vanilla cappuccino.
