Comfort Food Dinner

The weather recently started to turn so I’m craving comfort foods.  Tonight, I opted for mashed “potatoes” and meatloaf.  Since I’m still looking to lose 15lbs, my usual meatloaf recipe with pork won’t do.  I opted for the skinny meatloaf from Skinny Kitchen:

Food Networks “Mock” Garlic Mashed Potatoes:

3 things about these recipes:

  • the ingredients are pretty basic-I actually had these all in my house
  • the instructions are simple-pretty basic and easy to follow
  • I will absolutely, positively, without a doubt be making these again

I didn’t see a need for adding butter to the “potatoes”.  We loved them without it!


This is going on the healthy rotation menu list for sure!
