Simple Egg & Cheese Bake


This morning I put together a quick egg bake that can easily be adapted to your tastes.  This recipe is for the basic bake, but you could simply add in some cooked sausage, ham, veggies, change up the cheese, etc. to make it your own.  I believe this is a recipe from Bisquick, but I’ve been making this for so many years that I can’t recall.

Simple Egg & Cheese Bake

  • 6 eggs slightly beaten
  • 1 cup milk
  • 1.5 cups cottage cheese
  • 2 cups grated cheddar cheese
  • 1 tsp dried onion or 2 Tbsp fresh onion
  • 1 tsp dried parsley or 1 Tbsp fresh (I often omit this)
  • 1/4 tsp salt
  • 1 cup bisquick
  • 1/4 cup butter

Mix all ingredients in a bowl, except butter.  Melt butter in a 9×13 pan.  Bake at 350 degrees for 30-40 minutes.  I wiggle the pan a little bit to make sure the eggs are set.

This is one of my favorite breakfast dishes to make when having company over.  You can easily put this together in under 10 minutes and then enjoy your coffee while it bakes.  I usually serve this with bacon or fruit as a side.  I love my piece with some cholula hot sauce on top, but I love cholula on everything.
