Today, I entered the grilled cheese academy’s grilled cheese recipe showdown. I stuck with a pretty basic recipe, but after reviewing the 2015 winners, I hope to get a more complex recipe submitted before the competition closes tomorrow. That said, the one I submitted is pretty dang tasty! Here’s what I put together..
Sassy Summer Grilled Cheese Sandwich
- Two slices italian bread
- one slice wisconsin swiss cheese
- one slice wisconsin colby-jack
- 1/4 onion, sliced
- 1/2 avocado, sliced
- 1/2 roma tomato, sliced
- 3 Tbs butter, divided
- 1/8 tsp curry powder
- 1/8 tsp turmeric powder
- salt & pepper to taste
Melt 1 Tbs butter in a small sauté pan, add onions, curry, and turmeric. Saute until soft. Butter one side of each piece of bread (with the remaining 2Tbs of butter). Heat grill pan over medium heat and place one piece of bread butter side down. Top with one piece of swiss cheese and one slice of colby-jack. Once the cheese begins to melt, top with curried onions, tomato slices (sprinkled with salt and pepper), avocado slices (sprinkled with salt), and the remaining piece of bread. Carefully flip the sandwich over and cook until browned.
