“Mock” Garlic Mashed Potatoes

Another Front Porch Bliss Approved Recipe

We are still working on eating better here at the Front Porch Bliss household.  So, I recently made Mock Garlic Mashed Potatoes.  The recipe is actually more of a pureed cauliflower dish and it is delicious!  It was so good that we enjoyed it two nights in a row.  The first night we had it with leftover crockpot chicken.  Last night, we had it with some asparagus and turkey brats.  I highly recommend giving it a try!

I follow the recipe over here on Food Network-“Mock” Garlic Mashed Potatoes.  I’ve made this with fresh garlic, roasted garlic and with plain garlic in a jar.  The roasted garlic really elevates the dish.  I also omit the butter and just go with the simple salt addition vs. bouillon.

Seriously though, this is a dish you’ve got to try.  Diet or no diet, it’s that good.
