I wrote out a recipe for stuffed mushrooms fifteen or so years ago and handed it to a friend. Little did I know then that she would save that recipe and post it for me when I begged on Facebook for someone, anyone to help me locate it. (Thanks Sonch!) I have been searching for this simple recipe for about two years. I was craving these little suckers and thanks to this friend, I had them with dinner last night. My husband hates mushrooms, so I made a smaller batch, but they were just as good as I remembered them. (Next time, I’d probably broil them a bit longer than I did in the photo below, but I couldn’t wait any longer)
I have one little tip to share with you all about stuffed mushrooms before we get to the recipe.
Use a 1/8 teaspoon to core out the center of the mushrooms. It’s the perfect size, just be careful not to cut through the bottom of the mushroom.
