Have you ever tried to get a recipe for tamales from someone you know who actually makes them? I assure you, this is not an easy task. I have requested a tamale recipe from many friends and acquaintances over the years. Every time I ask, I hear a variation of these responses:
- My family would kill/disown/never forgive me if I gave out the recipe
- We don’t really have a recipe/don’t measure
- Sure! (and then they “forget”)
So, I’m on a mission. I’m going to try making them on my own. There are plenty of youtube videos to see technique and I’ve found a few recipes I’d like to give a shot. I’m also doing my own research on the history of these gems and plan to try out some local’s tamales. I’m especially intrigued by the (sweet) pineapple version I will have my hands on tomorrow. I’m also getting a cheese and jalapeño and a red pork version. I’m excited to try them out and see what I like or don’t like about them. Oh, and I’m also intrigued about the option of using my Instant Pot to speed up the process!
I realize that this is not a simple process and probably not feasible with a toddler running around. So, I’m enlisting two of my friends to join in the fun. I don’t drink, and one of my friends is pregnant, so I’m thinking I may need to make some nonalcoholic (and some with) drinks to set the mood. Any suggestions? Also, I’m guessing my dear husband won’t be interested in eating an entire meal of tamales. What are your favorite dishes to enjoy with your tamales? I’m all ears if you have any tips or recipes you care to share!
